If I weren't going into missions, I think I'd like very much to be a travel agent. It's kind of like a grown-up version of "connect-the-dots" - with a dose of economy and scheduling skills thrown in. It's fun!
Of course, being in missions, I'll get plenty of opportunity to plan and book trips. :)
